This vinegar is the result of a very slow process of acetification and aging of selected varieties of grape must from the Modena region. The cooked grape must passes from barrel to barrel of different wood types throughout the years. The Balsamic Vinegar of Modena PDO (Protected Designation Of Origin) can only be bottled in the original flask designed by Giugiaro and only at 2 aging levels: Affinato (at least 12 years old) or Extravecchio (at least 25 years old).
