Cumin is an aromatic plant whose seeds are used on many occasions around the world: it is part of a majority of blend of spices like curry, Colombo or ras-el-hanout, it is found in cheeses like Edam and Gouda in the Netherlands, and it seasons many typical regional dishes such as couscous, tajine, chili con carne, empanadas, etc. Both whole cumin seeds and ground cumin can be used. Its hot and spicy, slightly bitter, flavour pairs ideally with vegetables (carrots and cabbage in particular), lamb, chicken, fish and sauces.
