Red Pesto and Ricotta
A pesto rosso which brings out the tomatoes, softened by the tenderness of a cheese soft like cream
This red pesto is made from fresh tomatoes, crushed walnuts, ricotta and seasoned with very fragrant Sicilian basil. As an aperitif, it is excellent on toast with anchovies or raw ham. It also goes perfectly with pasta or mixed with a salad dressing.
Tomato, sunflower oil, extra virgin olive oil, basil, ricotta cheese (milk, salt) 8%, walnuts, garlic, wine vinegar, salt, hot pepper.
