Wild voantsy perifery pepper

Harvested in Madagascar from the top of giant trees, a mild but tasty peppercorn, with a strong woody note.

Tips for use

Almost unknown, the Voantsy Perifery pepper is a wild pepper growing on high lianas (up to 20 meters above the ground) in the humid tropical forest of Madagascar. Thus, the harvest by hand proves difficult and dangerous for local villagers,. When harvested, the berries don't exhibit the same stage of maturity which explains the difference in the grain colour.
Its flavour is strong without being spicy, and its aroma is woody and slightly fruity, with hints of citrus and flowers. Its fresh taste lingers in the mouth and goes very well with meat (especially pork and lamb) and with coconut milk sauce.
