1 tbsp. lemon juice,
1/2 chopped onion,
1 crushed clove garlic,
1/2 tsp. cumin,
200g washed chickpeas,
60ml semi-skimmed milk,
1 tsp. peanut oil,
1/4 tsp. sesame oil,
2 tsp. fresh chopped coriander.
Accompaniment: lettuce, raw vegetable rods, crackers or breadsticks.
Heat the lemon juice in a small pan with the onion and garlic until tender.
Put them in a blender with the remaining ingredients.
Refrigerate and serve the hummus as a first course with lettuce or as an appetizer with crackers, breadsticks…
